Colonial Bacon and Ham - The Process

Like anything worth doing, creating delicious bacon and ham takes time and expertise. Check out how Colonial Bacon turns fresh pork into mouth-watering rashers of middle, shoulder and streaky dry cured bacon and succulent ham.

Dry cure Bacon

All our bacon is lovingly smothered in a cure of salt, sugar and sodium nitrate, a safe and naturally occurring type of salt. The smoking process infuses our meat with so much flavour that we don’t use MSG, HVP or soy.

The pork for our bacon is carefully selected from farms in Denmark, Australia and Finland who have an excellent track record of pig welfare.

 

Dry cure Middle Bacon

Each succulent loin is chilled and turned daily to let the cure do its work. Netted and cold smoked over Manuka saw dust the meat is infused with a mouth-watering aroma and flavour before it’s chilled and sliced.

Available in 300 or 400 gram vacuum packs.

Dry cure Streaky Bacon

Each boneless, skinless pork belly is first covered with our special cure. It’s then stacked, stored and chilled for a couple of days before being cold smoked over our new oaked saw dust to infuse each rasher with the distinctive aroma.

Available in 200 or 350 gram packets.

Dry cure Shoulder Bacon

The boneless pork shoulder is rubbed with cure, stacked, stored and chilled for eight days. Once it's been cold smoked over Manuka saw dust, each rasher is infused with an irresistible flavour and mouthwatering aroma.

Available in 300 grams packets.

Supreme Sliced Leg and Flavoured Hams

Supreme leg and flavoured hams are lightly cured, then massaged to join the muscles of leg meat together, giving them a smooth, glossy finish. They're then bagged by hand to give each slice an even shape, smoked, steamed-cooked to 72 degrees, and held for 20 minutes.

Meat for our Supreme Leg Ham is taken from three parts of the pork leg. The fat and skin are always removed so your succulent ham is lean, healthy and 99% fat-free.

Once sliced, our ham is packed fresh in our new, resealable bag so you can enjoy a few pieces, and then refrigerate the rest for later. It'll keep for up to 5 days.

Pork for our sliced leg ham is sourced from our approved Canadian or American suppliers.

Oak Smoked Ham Sliced 100 grams

Our Oak Smoked Ham is steam-cooked with our new oak sawdust, giving it a delicious, distinctive oak aroma and taste.

Luvit Ham and Bacon

Delicious and reasonably priced, Luvit is ham and bacon for the whole family.

Sandwich Ham 250 gram

90% lean boneless pork pieces are cured, massaged and then pressed into conveniently shaped square casings - the perfect size for sandwiches. Simple and delicious, Luvit sandwich ham goes perfectly with your favourite toppings.
